Parsley Liquor

  • 25gms of butter
  • 25gms plain flour
  • 300mls (10floz) of water
  • 4 tbsp of chopped parsley
  • 1 tsp of Malt vinegar.
  1. melt the butter in a saucepan, add the flour and cook long enough to cook the flour through but not to darken too much. Usually about a minute is enough.
  2. Gradually add the water and keep stirring to avoid lumps, bring the whole lot to the boil. Keep stirring and add the parsley and vinegar. Season well.
