Blueberry Compote

This is wonderful on cheesecake, or even just over some Greek yogurt for super breakfast..

  • 2 tbls sugar
  • 1 tbls cornstarch (you can miss this if the sugar is preserving sugar)
  • 3 tbls port
  • 1 tbls water
  • 1 cup (about one large handful) blueberries 1
  • 1 tsp of lemon juice

Mix the cornstarch and sugar together, then add the port, water and blueberries. Cook over a low heat until the lot has thickened up. Remove from the heat and add the lemon juice.
