Who knew that this would become my favourite Martini – of course I came to it slowly because I had to drink my way through the rest. Anyway, the Chambord gives it a wonderful sherbet flavour. What I want to do is make some, blitz it into a froth and then use some of the foam on fish but haven’t worked that one out yet. In the meantime, I’ll just have to keep testing. Enjoy.
For Four People
- 8oz vodka
- 4oz pineapple juice
- 1oz Chambord (raspberry flavour liquor)
Mix the lot in a shaker, shake well, strain and pour into Martini glasses.
